It doesn't look unlike 67P  (Rosetta comet) with the big bit and the little bit.

A duck springs to mind......

As with 67P it does look like two objects that have come together. It does support the theory of how stuff gently came together to form the early solar system.

It's a cracking image and I look forward to seeing what else they found as New Horizons shot past.

Yes it is a very interesting shape very similar to 67p.

 

67p is a bit smaller at just over 4km. Ultima is 33km. Maybe there are a lot more with a similar shape.
