Stars with jet black backgrounds

Here is a vey big enlargement of a star from an image I found consisting of many stars.

Although there are background pixels around the star the rest of the image is free of them.  The rest of the image without a star is jet black like this.

It's as though the processing has sensed where each of the stars are and cut the rest of the image to pure  black.

What type of imaging software gives this effect I wonder?

Is it done by use of a colour picker?
